Dark Chocolate Macadamia Sea Salt Bars (Fat Bombs)

The Tumtree kitchen has been cookin again with a handful of new low or no carb treats you can enjoy and still FEEL GOOD. This ones my fave because I'm so in love with Jojo's chocolate bark (from Costco). These have even less sugar AND more quality, antifungal coconut oil in them! Give it a go and let me know what you think of them.

What's a "fat bomb" you ask? It's the "protein energy balls" of yesterday, but with way low to no carbs in them that spike blood sugars. It's sugar-free, dairy-free, gluten-free goodness that treats you like you're the Queen of Sheba, but without the desert dust and the entourage.

Ingredients:

3.5 oz (100 g) 100% unsweetened dark baking chocolate broken into pieces

2 Tablespoons (24 g) monkfruit or stevia to taste

2 Tablespoons (30 ml) coconut oil, melted

1/4 cup (32 g) macademia nuts chopped

1 teaspoon sea salt flakes

Instructions:

1. Melt the chocolate and coconut oil over very low heat in a small saucepan.  Remove from heat and stir in the sweetener.

2. Pour the mixture into a loaf pan or other container and put into the fridge for 15 minutes – the mixture should be starting to set but not solid yet.

3. Scatter the crushed macadamia nuts with sea salt over the top. Or for variation use chopped dried cranberries and pistachios (for Jojo's fans like me). Lightly press into the chocolate.

4. Place back into the fridge or freezer for 2 hours to solidify. Slice into bars or break into bark. Store in ziploc bag in fridge.
