Pinocchio Fries

Everyone loves this “Italian style” substitute for greasy french fries. Dip them in Super Secret Sauce below.

5 pounds red or white unpeeled potatoes, cut into wedges

1/2 cup olive oil or melted butter

2 cloves garlic, crushed or 1 teaspoon garlic powder

1 teaspoon each: salt, Italian seasoning, paprika, parsley

Roll potato wedges in oil mixture and place flat on cookie sheets. Bake at 400˚ for 25 minutes or until soft. If you carefully place wedges standing up with the skin side down there is no need to turn them with a spatula half way through. Serve with Ketchup, Secret Sauce or UnRanch Dressing from The Feel Good Cookbook.

Super Duper Secret Sauce (spoken only in a whisper)

1 cup healthy mayo

1/2 cup salsa or ketchup

pinch of cayenne or few drops pepper sauce

Blend, bottle and store in fridge.
